It's pumpkin season! Pumpkins are a healthy and versatile local food and for our 4 Ps Library this month we want to share with you some super fun links and archived posts showcasing those marvelous squash that we like so much:
- Check out these tips for storing squash to keep your pumpkins fresh until you use them.
- The Downhomer just shared some fun stencils for Newfoundland themed jack o' lanterns.
- Make your own pumpkin puree as an alternative to buying cans. Follow these instructions and keep in mind that two cups homemade pumpkin puree equals about one store-bought can for recipes.
- When you carve your pumpkins this year, don't forget to save and toast some seeds. Try them plain and salty, spicy and sweet or use your own favourite seasonings.
- We've got so many delicious squash recipes on the blog! Pumpkins, butternut squash and other winter squash varieties can be substituted for one another when using them in recipes. Try making butternut pancakes or look for pumpkin recipes for breakfasts, salads, with meat and fish, with other vegetables, and in desserts.
- Pumpkin butter- It makes anything you put it on taste like pumpkin pie. Enough said!
- Pumpkin pie smoothie- A super yummy way to start off a beautiful fall morning.
- A local favourite around St. John's, the Pumpkinfest at Lester's Farm Market was postponed last week due to weather but it's tomorrow, Saturday Oct. 22.
- Learn all about squash and pumpkins in Atlantic Canada from the NL Department of Natural Resources Agrifoods.
- Try making a spicy pumpkin soup or another kind of soup, stew or chili to warm you up in the evening. You can also freeze leftovers for meals this winter.
- Whole Foods Market also put up some great healthy and delicious pumpkin recipes.
- Remember to compost your spooky Jack O' Lantern after Halloween and your pumpkin scraps after cooking and check out MMSB Backyard Composting for resources to do that.
